This is a great way of using up imperfect pears or pears that are just turning.  The fruit makes this recipe very moist and delicious. To make ground walnuts, you can blitz whole or pieces in a food processor until finely ground.

Makes 10 servings

Ingredients


  • 2-3 whole pears
  • 150 grams softened butter
  • 160 grams brown sugar
  • Dash of salt
  • ½ teaspoon vanilla paste
  • 3 eggs
  • 120 grams all-purpose flour
  • 1 ½ teaspoons baking powder
  • 125 grams ground walnuts

Instructions

Make the Cake

  1. Wash and dry your pears.
  1. Preheat oven to 180°C/350°F. Grease and flour a loaf pan and line with parchment paper.
  1. Beat butter with the sugar, salt and vanilla for 3 to 4 minutes with a hand mixer.
  1. Add the eggs one at a time until incorporated.
  1. Mix the flour, baking powder and ground walnuts together and add to the batter until combined.
  1. Pour the mixture into the prepared loaf pan and push the pears into the batter. Bake for 55 mins and until a skewer comes out clean. Allow to cool for at least 40 minutes before slicing and serving.
