Consistently rated one of the best pie establishments since opening in 2014, Petee’s Pie offers New Yorkers little slices of heaven from two locations. But now thanks to Pie for Everyone: Recipes and Stories from Petee’s Pie, New York’s Best Pie Shop (Abrams, $26.99), Petee’s can be baked in your own home regardless where you live. It’s more than a cookbook, as the title suggests. Head baker, co-owner and author Petra Paredez offers you a glimpse into her world with historical context and stories from her life as well as those of some of her local purveyors. She comes from a pie pedigree (her parents have owned Mom’s Apple Pie Company since 1981) and by sheer number and quality of the recipes, you can tell the pie gene runs strong. There is a distinctively vintage feel to many of them, for instance she offers five versions of chess pie alone, yet much of the book is firmly in the modern era. There are seven pastry dough options, including vegan and gluten-free, and she offers some more global flavors such as a cardamom-rose, cajeta and chèvre. She indeed offers something for everyone, so find what suits your tastebuds and dig in!
