Chetna Makan, author of Chetna’s Healthy Indian (Mitchell Beazley, 2019) and Chetna’s 30 Minute Indian (Mitchell Beazley, 2021), came into the spotlight when she competed on Season 5 of The Great British Baking Show, making it to the semi-finals. If you watched her on that show, you know that Chetna puts a unique spin on her recipes, frequently combining Indian ingredients with traditional Western baked goods. We’re happy to announce that Chetna has just re-released her fabulous book The Cardamom Trail: Delicious Bakes Inspired by India (Mitchell Beazley, 2021), which was originally published in 2016. In this collection, Chetna shares 100 of her inspired recipes, from cakes and pies to leavened breads flatbread and accompaniments. We can’t wait to try her Curry Onion Tart, or her Masala Chai Baklava or her Black Sesame and Lime Cake (first on the list!). There’s also a sponge cake with a cardamom and coffee filling; puff pastry bites filled with fenugreek paneer; swirl bread rolled with citrusy coriander, mint and green mango chutney; or steamed strawberry pudding flavored with cinnamon – so many enticing recipes with interesting flavor profiles and combinations. Whatever you choose to make, Chetna’s Indian influences are bound to transform baking from the familiar to the exotic and from the ordinary to the extraordinary.
