Vegan baking is often considered difficult, complicated and in the end, disappointing. But it doesn’t have to be! And that’s what the new book Fantastic Vegan Cookies: 60 Plant-Based Treats for Any Occasion (Page Street Publishing, 2021) by Tiina Strandberg aims to prove. There are no strange ingredient requests that require a Google search to find out what they are. Rather, Strandberg relies on items that you can find at pretty much any modern grocery store, like plant-based milks, chickpeas and medjool dates. The instructions are straightforward and avoid fussy techniques and offer fun vegan-approved riffs on classics like “Snickers” bars and crunchy peanut butter cookies. Even if you aren’t a vegan, you will have fun experimenting and trying something new. Us? We’re starting with the Gingerbread Fudge Bars.
