Baker Edd Kimber, who won The Great British Bake Off in 2010, has just released another fabulous collection of one pan baking recipes: One Tin Bakes Easy: Foolproof Cakes, Traybakes, Bars and Bites from Gluten-Free to Vegan and Beyond (Kyle Books, 2021; $19.99). As the title suggests, the book features a combination of traditional recipes made with dairy along with vegan and gluten-free recipes. Every recipe can be made in a 9 x 13-inch (23 x 33cm) baking pan, but Kimber also offers guidance on baking in an 8-inch (20cm) square pan as well as a loaf pan. Some of the enticing recipes we are eager to try include: Espresso Caramel Cake; Pumpkin Sheet Cake with Maple Butter Glaze; Tahini Brownies; PBJ Thumbprint Bars; Miso and Rye Chocolate Chip Cookie Bars; and (gasp!) Brown Sugar Butterscotch Cake. So, get yourself a 9 x 13-inch pan if you don’t have one, and then make room on your cookbook shelf for this exceptional book.
